The Novello Oil is obtained from the pressing, within a few hours of harvesting, of the first olives still attached to the tree. After a short period of natural settling, the oil is bottled unfiltered, resulting in an oil with extraordinary taste properties, low acidity, and a fresh and harmonious aroma.
